The water crisis in Cape Town calls for some innovative thinking and is inspiring new ways of living. Rising to the challenge and showing that life can still be great while observing restrictions on water use,The Table Bay, Victoria & Alfred Waterfront and Studio H are collaborating on a decidedly different, waterless dinner on Jetty 2 to mark Earth Hour on 24 March 2018.
The Table Bay’s Executive Sous Chef Keshan Rambarun has designed a four course dinner using ingredients and dishes inspired by Studio H’s research project, S/ZOUT. The project, which was showcased at Dutch Design Week in 2017 as part of an exhibition that looked at the future of food, in the face of depleting resources, imagined the future of food if the water used for agriculture is sea water.
Taking his lead from this Rambarun will prepare dishes using sustainable cooking methods and utilizing indigenous ingredients. Many of the dishes will be served cutlery and crockery free, to be enjoyed straight from the table, using hands and the Table Bay will also be sourcing eco-friendly crockery and cutlery for the remaining dishes. Piles of salt along the floor will symbolise the daily water allowance for Cape Town’s residents and visitors.
Adding to off-the-grid feel, only UV and solar lighting will be used and all lights will be switched off for Earth Hour, between 20h30 and 21h30, during which guests will tuck into a delightful glow in the dark dessert.

“This extraordinary experience allows us to highlight the current water scenario and increase awareness. Certainly, the experience itself promises to be special and we have no doubt our guests will take something home from it too,” says Chef Keshan Rambarun.
The Earth Hour waterless dinner will commence at 18h30 and seats are limited to preserve the intimate atmosphere on the jetty, under African skies. Tickets are R250 per person. Booking is essential on Quicket.
